Time to Give Thanks

This is the time of year to give thanks. Thanksgiving is a perfect time to reflect on all the blessings in our lives. It’s a season of celebrating with family and friends. Thanksgiving is a time to make traditional foods and reflect on what we are grateful for. We plan, experiment with new dishes or turn to recipes that have been passed through the generations. Some will make reservations at a favorite restaurant or cater in; but we gather to give thanks.

Thanksgiving week is one of the busiest travel holidays, as family and friends get together to celebrate. As a guest its proper etiquette to bring a gift for a Thanksgiving dinner. This dinner guest wanted to bring a gift that would contribute to the family’s traditions but include decorative items that could be enjoyed in the future. The Thanksgiving Gift Basket included pumpkin coffee and pumpkin quick bread, that guest could make early in the morning, so the host family could enjoy the Thanksgiving parade. The hostess also adores pumpkins, so the gift included an embroidered kitchen towel,pumpkin salt and pepper shakers, and handmade decorative pumpkin. It’s the details and thoughtfulness that make a special gift.

Thanksgiving can be a time of gratitude and showing appreciation to those we love. This gift was spiritually given by a pastor to a member of the community that had supported them in the growth of a new church.The gift celebrated Thanksgiving with gourmet snacks, “A Celebration of the Heart” songs, inspirational writing, 2 Morton’s Gift Cards, and decorative items. Sometimes a gift can communicate so much more than a simple “Thank You”.

For some families it’s more than a celebration of Thanksgiving, but a holiday highlighted with anticipation, around college football games and three NFL games. We all have our family traditions. Many years ago, I was determined to create a moist spiced Apple Cake Bread recipe. Through trial and error, and experimental failures, a delicious Apple Cake Bread has graced the Le Blanc’s Thanksgiving table for 33 years. From our table to yours a very Happy Thanksgiving!

Apple Cake Bread

3 eggs                                      ½tsp. baking powder

1 c. Wesson oil                       1tsp. salt

2 c. sugar                                2tsp. vanilla

2 ½ c. peeled Granny Smith   3½ tsp. cinnamon

      apples, diced                    1 c. plain yogurt

2 ½ c. flour                              ¼c. crushed pecans

2 tsp. baking soda

Mix the ingredients in order. Last, fold in 1 cup plain yogurt. Place in 2 loaf pans, greased and floured. Sprinkle 1/8 cup crushed pecans on top of the loaf pans before cooking. Preheat the oven to 350 degrees.Cook for 1 hour until golden brown.
